At this time of year, many thoughts - especially in young minds! - turn to Halloween and the joys of picking & carving pumpkins.
What you may not be aware of is that more than half of the 24 million pumpkins carved for Halloween in the UK in the next few weeks will not be eaten and almost 2 million will not even be composted, but instead will be thrown into normal rubbish waste (reported in The Guardian). It's certainly a missed opportunity!
Pumpkins used to just be grown mainly for carving but now there are a huge variety of culinary pumpkins that are incredibly flavoursome, with different textures for different cooking purposes, and even the flesh from those big carving pumpkins can, at the very least, be turned into a tasty soup.
