Pork Tenderloin Recipe with Easy Satay Sauce

This delicious pork tenderloin recipe can be cooked on the BBQ or in the oven.  We use this cut of meat frequently - it's inexpensive and easy to cook and handle.  It's a good alternative to chicken.  We love this BBQ pork stuffed into wraps, smothered with satay sauce and topped with our Carrot Salad.  The easy satay sauce recipe (see below) is so simple to make and is delicious over pork, chicken, vegetables or simply as a dip!  This makes a large batch so freeze any leftovers for another time.

Prep time: 15 minutes
Cooking time: 20 minutes
Method: BBQ or Oven

Ingredients:

  • 2 pork tenderloins, trimmed of excess fat
  • Salt and pepper to season
  • Oil to brush over pork (and a little for the BBQ too)

Satay Sauce Ingredients:

  • 400ml tin coconut milk
  • 6 heaped tbsp smooth peanut butter
  • 4 tbsp soy sauce 
  • 3 tbsp lime juice
  • 3 tbsp brown sugar
  • 2 heaped tsps Bhuna Spice Mix (or use any Spice Pots)
  • Vegetable oil for the grill

Satay Sauce Method

  1. Put all of the satay ingredients into a pan, mix well and bring up to the boil.  Be careful not to burn on the bottom. 
  2. Turn down and simmer gently for a couple of minutes. 
  3. If the sauce is too dense, add a little boiling water to loosen and mix well.

Pork Tenderloin Recipe Method - BBQ

  1. Trim the pork tenderloin of excess fat and rub with olive oil and season with salt and pepper.   
  2. Ensure the grills of your BBQ are clean and hot and brush with a little oil if necessary.
  3. Place the pork onto the BBQ.  The cooking time will vary according to the size and thickness of the pork but initially, cook for 4 minutes on one side (don't fiddle with it before then!). Then, turn and cook for another 4 minutes on the other side.   
  4. You will then likely have to cook for another 4 minutes on each side but adjust according to the thickness of the tenderloin.  The pork is ready when the internal temperature is between 140-145 ° F. The pork should be slightly rosy pink.  
  5. Once ready, transfer to a board and let rest for 10 minutes (cover with foil).
  6. Slice the pork and serve with salads or stuff into wraps, smothered with the satay sauce.  We love the carrot salad along side this recipe but see below for other side dish / salad ideas.

Pork Tenderloin Recipe Method - Oven

  1. Pre-heat the oven to 230 ° fan and place your frying pan or skillet in the oven to pre-heat at the same time.
  2. Trim the pork tenderloin of excess fat and rub with olive oil and season with salt and pepper.   
  3. When the oven and pan have come up to temperature, place the pork into the pan.  You should immediately hear a sizzle. If not, your pan is not hot enough.
  4. Cook at 230 ° fan for 10 minutes. 
  5.  Turn the oven down to 210 °, turn the pork then put back into the oven for another 10 -15 minutes.
  6. The pork should be lovely and browned on the outside and it's ready when the internal temperature is 140-145 ° f.
  7. Rest for 10 minutes before slicing and serving.
