Sweet Spice Date Loaf

This recipe works so well with our Sweet Spice blend - thanks so much to our web developers for sharing! It's adapted from the recipe at The Klutzy Cook.

Ingredients
1 cup chopped dates
¾ cup sugar
60g (3 tablespoons) butter
1 teaspoon bicarbonate of soda
1 cup boiling water
1½ cups self raising flour
1-2 tsp of sweet spice
1/2 tsp of vanilla extract

Method
Preheat oven to 160C (320F). Grease and line a loaf tin. Put dates, sugar, butter and bicarbonate of soda into a saucepan. Pour over boiling water.

Heat mixture to a boil and let it boil for a couple of minutes. Remove from heat.

Allow to cool for a bit then add the flour. Mix flour in until just combined. Add sweet spice and vanilla extract.

Pour into lined loaf tin.

Bake for 45 minutes, or until skewer comes out clean.

Serve warm or allow to cool and store in an airtight container.
