Halloumi Skewers

Halloumi Skewers or Halloumi Kebabs are a wonderful addition to BBQ meals.  Intersperse the halloumi chunks with vegetables such as baby tomatoes, courgette, red onion and peppers.

The high melting point of halloumi makes it an ideal ingredient for BBQ skewers and a great addition to your list of vegetarian BBQ ideas.

Did you know that halloumi has ancient roots dating back to the Byzantine period (AD 395-1191)?  It has been a key part of the diet in the area for many centuries.  As a protected Cypriot product in the EU, it is still widely eaten today in various traditional dishes and is often paired with watermelon.

Spicy Grilled Halloumi Skewers Recipe

Makes 6-8 skewers

Easy and delicious, add these spicy grilled halloumi skewers to your next BBQ.

Ingredients:

  • 250g halloumi cheese, cut into 1-inch cubes
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 yellow bell pepper, cut into 1-inch pieces
  • 1 red onion, cut into 1-inch pieces
  • 1 courgette, sliced into thick rounds
  • 2 tablespoons olive oil
  • 3-4 teaspoons of Tandoori Masala or Madras Spice Pots blend
  • Salt and pepper to taste
  • Fresh coriander or parsley, chopped (for garnish)
  • Lemon wedges (for serving)

Instructions:

  1. Prepare the Skewers:

    • If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  2. Marinate the Halloumi and Vegetables:

    • In a large bowl, combine the olive oil, lemon juice, Spice Pots spices, salt, and pepper.
    • Add the halloumi cubes, bell peppers, red onion, and courgette to the bowl. Toss everything well to coat evenly with the spice mixture. Let it marinate for at least 15-20 minutes.
  3. Assemble the Skewers:

    • Thread the halloumi and vegetables onto the skewers, alternating between different vegetables and halloumi cubes to create a colourful mix.
  4. Grill the Skewers:

    • Preheat your BBQ or grill to medium-high heat.
    • Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the halloumi is golden and the vegetables are tender and slightly charred.
  5. Serve:

    • Transfer the skewers to a serving platter.
    • Garnish with freshly chopped coriander or parsley.
    • Serve with lemon wedges on the side for squeezing over the skewers.

Tips:

  • For an extra kick, you can some chopped fresh chillies to the marinade.
  • These skewers pair well with a fresh salad, pita bread, and a yogurt or tahini dipping sauce.
  • You can also add other vegetables like cherry tomatoes, mushrooms, or aubergine for more variety.
