Easy Flatbread Recipe

This flatbread recipe is so easy and it works every time!   You can flavour with cumin seeds or nigella seeds or you can leave plain.

Homemade flatbread is a great option if you are cobbling together a family lunch or brunch, run out of bread or have unexpected visitors pop over.  This easy flatbread recipe will become a favorite.   Freeze the dough in balls for next time if you make too much and then use the leftovers for work lunches or easier mid week meals.

Ingredients:

225g self-raising flour
1 tsp baking powder
1 tsp cumin or nigella seeds (optional)
1/4 tsp salt
200g natural yoghurt (low-fat yoghurt also works here)
1 tbsp vegetable oil

Method:

1. Mix the flour, baking powder, seeds (if using) and salt in a large mixing bowl.  Add the yoghurt and mix with a wooden spoon to pull together a rough dough.

2. Mix in the oil to form the dough and knead until smooth.  A couple of minutes.  Leave in the bowl and cover for 10 minutes.

3. Divide the dough into 8 balls and roll each out thinly on a lightly floured surface.

4. Cook on the BBQ (the hot part) or alternatively on griddle or hot dry pan on the hob.  1-2 minutes on each side will do it - until puffed up and charred.

We love breads to scoop up the delicious juices of any curry or stuff with Tandoori Masala Chicken Skewers and Carrot Salad.  Or top with a fried egg and bacon for an easy tasty brunch.
