Spiced Fruit Compote

This is a really simple recipe for our Sweet Spiced Fruit Compote. Brighten up your breakfast by adding to yoghurt or serve warm with vanilla ice cream. You can use any fresh seasonal fruits but it's just as easy to buy a pack of frozen mixed berries! It's a good way of using up fruits and it stores well in the freezer.  Try adding our Sweet Spice to stewed apples or rhubarb too! 

Serves 4-6

Ingredients:

450g frozen mixed berries (such as raspberries, strawberries, blackberries, redcurrants, blackcurrants)
150ml water
2 tablespoons of sugar
Juice of 1/2 lemon and rind, grated
4 heaped teaspoons of Sweet Spice blend

2 teaspoons of cornflour, mixed with a little water. 

Put berries, water, sugar, lemon juice, rind and the Sweet Spice in a pan. Bring to the boil and simmer for 5 minutes. Remove from the heat and allow to cool for 5-10 minutes.  Mix the cornflour with a little cold water to form a thick paste. Stir into the compote mixture to thicken.
