An Easy Easter Menu with an Indian Twist
An Easy Easter Menu with an Indian Twist
We often cook Roast Lamb at Easter, when we've usually got a house full. This alterative Easter Feast is mainly prepared in advance leaving you plenty of time to enjoy the Easter Egg hunt and your guests. The marinated leg of lamb is aromatic and not too spicy and all of the cold or hot sides below can be made in advance. Finish it all off with Rhubarb Fool - the perfect spring dessert.
An Alternative Easter Menu
Spice Pots Spiced Roast Lamb - marinade the day before. Not too spicy, it's suitable for all the family, from kids to grandparents. We've suggested both cold and hot side dishes. Take your pick!
COLD SIDES
Tomato and Lentil Salad - make the day before to let the flavours develop.
Carrot Salad - make the day before but mix well before serving.
Mint and Coriander Raita - much easier to make than a sauce and the mint pairs so well with the lamb
Flatbreads - these work every time! Get ahead and make the dough earlier in the week
HOT SIDES
Garlicky Tarka Daal - add lashings of fresh coriander.
Aloo Gobi - the perfect pairing for the roast lamb.
Add could also add some Mint and Coriander Raita to finish off this simple Indian Easter Feast.
DESSERT
Rhubarb Fool - the tangy rhubarb is mellowed by the cream and our sweet spice. Only the whipped cream to add on the day.
Leave some room for the chocolate afterwards!
If you would prefer a lamb curry, try our easy Aloo Ghost or Lamb Rogan Josh.
