Indian Scrambled Eggs (Akoori)

This is a quick and delicious breakfast that you can make any day of the week. Add a side of protein and/or our flatbreads for a more filling meal.

1 tbsp butter
1 red onion finely chopped
2 garlic cloves, crushed
3 tsp Bhuna Spice Pot or Goan Spice Pot for more heat
2 tomatoes, finely chopped
8 eggs, beaten
Salt and pepper
Handful chopped fresh coriander, to serve

  1. In a pan, melt the butter and add the onion and garlic. Cook for 5 mins or until the onion has softened. Add the Bhuna Spice and cook for another minute.
  2. Add the tomatoes to the pan and cook for a couple of minutes. Turn down the heat and add the eggs.
  3. Scramble the eggs by stirring gently and remove from the heat whilst they are a little runny. Leave to the side for a further minute in the pan.
  4. Season with salt and pepper and serve with coriander and a flatbread.
