Pulled Pork Recipe

This simple pulled pork recipe is great to put on and forget about. It can be made in a slow cooker or in the oven on a low temperature.  This recipe is extremely easy and works so well if you are running a busy household or as a  brilliant option for casual entertaining.

It really couldn't be more simple to make deliciously tender and warming dishes that will please a crowd. Stuff into bread rolls with our carrot salad and our mint and coriander raita for a warming, filling casual meal.  Both kids and adults will love this, making it a family favourite.

Serves 8 to 10

Ingredients 
2 kg pork shoulder, skin on

8-10 tsps Goan Spice Pot (or use the Bhuna or Tandoori Masala) 
400 ml stock
Salt, to taste

Prepare the meat by rubbing the spices and salt into the meat.

In the slow cooker: Place the meat (skin side up) into the slow cooker and pour the stock over and around the joint.  Cook on low for 6 to 8 hours.  If it ever looks dry add more stock.

In the oven: Place the meat (skin side up) and stock into roasting pan and cover with a double layer of foil, securing it tightly at the edges to ensure no steam escapes. Slow roast at 150C for 6 to 8 hours, until falling apart.  Check periodically to ensure it's not drying out and add more stock if it needs it.

Once the meat is tender and falling apart, cut off the skin then shred the meat with 2 forks.   Keep some of cooking juices in the slow cooker or roasting pan and then add the shredded meat to keep warm before serving.  Check the seasoning and add more if required.  You could even add some BBQ sauce to the mix.  Make the day ahead for maximum ease! 

Serve in soft white rolls with our delicious carrot salad for a deliciously simple family meal.
