This is a simple, healthy recipe for Indian curry prawns for the BBQ or grill. Family friendly and delicious.
For the Marinade:
150ml Greek Yoghurt (or use soya yoghurt for a dairy free option)
2 tablespoons lime juice
3 teaspoons of Spice Pots Tandoori Masala Blend
Salt, to taste
Handful of fresh coriander, chopped
1 lime, cut into wedges
Mix all the ingredients of the Marinade in a bowl. Stir to combine well. Add the prawns to the Marinade and marinate for at least 30 minutes, or best for two hours. Thread the prawns onto the bamboo skewers and grill on both sides (baste with oil to avoid them sticking), until they are cooked and slightly charred on the surface. This won't take long!
Remove from the grill, garnish with chopped coriander and serve immediately with lime wedges.
