Bread Sauce

Bread Sauce in a pan

Homemade, creamy bread sauce makes a delicious accompaniment to roast chicken or turkey.  The addition of our sweet spice blend takes this up a level - the nutmeg, cinnamon and cloves makes this an ideal bread sauce recipe for your Christmas Dinner.

Serves 8-10

Bread Sauce Ingredients:

  • 600ml full fat milk
  • 50g butter
  • 1 onion, peeled and quartered
  • 2 garlic cloves, peeled
  • 1 bay leaf
  • A few thyme sprigs
  • A few peppercorns or a good grind of black pepper
  • 1 tsp Sweet Spice
  • 100g white breadcrumbs (around 2 slices of bread or use baguette)
  • 200ml cream (single or double)

Bread Sauce Method:

In a small pan add the milk, butter, onion, garlic, bay leaf, thyme, pepper and the sweet spice. Simmer for around 20 minutes.  Be sure to have this on a low simmer so that it does not catch and burn on the base of the pan.

Strain through a sieve and then return to a clean pan.

Add the breadcrumbs and gently cook until soft, around 3 minutes.  Then add in the cream.  Check the seasoning and add salt or pepper as you like.

You can make this a couple of days ahead and keep in the fridge.  Alternatively, you can make way in advance (get organised for Christmas) and freeze.  When reheating, stir well and if you like, add more cream at the last minute!
