Sweet Spice Gluten Free Biscuits
These are DELICIOUS but not for those who are allergic to, or don't like nuts. Ground almonds and ground hazelnuts are in place of flour. These are almost like biscotti in texture.
Makes about 20 biscuits
250g ground almonds
70g hazelnuts, ground
250g caster sugar
1/2 tsp vanilla extract
3 tsps Sweet Spice Blend
Combine all the ingredients into a bowl and mix well.
Line a tray with baking paper and oil slightly. Heat the oven to 180c / 160c fan.
I found the mixture extremely sticky so put mine into a piping bag to pipe out the little biscuits. It also works if you oil your hands slightly, then make little round balls and flatten on the tray.
These would make a great accompaniment to our Coconut Ice Cream or Apple and Pear Compote.
