An Easy Easter Menu with an Indian Twist

We often cook Roast Lamb at Easter, when we've usually got a house full.  This year, we will be having a Spice Pots style leg of lamb with easy accompaniments.  Most of this easy menu can be made the day before, so that you can hide the eggs in the garden and enjoy your guests.

Spice Pots Spiced Roast Lamb - marinade the day before.  Not too spicy, it's suitable for all the family, from kids to grandparents

Serve with: 

Tomato and Lentil Salad - make the day before to let the flavours develop.

Mint and Coriander Raita - much easier to make than a sauce and the mint pairs so well with the lamb

 Add a simple green salad, some rice and flatbreads to complete the Easter Feast!  Leave some room for the chocolate afterwards!
