National Eat Outside Day 2019

To celebrate National Eat Outside Day, here we are sharing a tried and tested summer menu for eating in your garden or whilst you are camping or for a barbecue on the beach.  Our focus is always on making cooking as easy as possible and so all the salads and marinades were done that morning (the day before would also totally work).  With most of the work already done, it was so lovely to sit outside and catch up with friends.  As we are in-between garden furniture at the moment (!), we simply moved our kitchen table and chairs outside.  I felt like I was on holiday!  

As we live in Scotland, to maximize eating outside days, we usually have blankets at the ready for our guests and our rusty old fire pit close by but last weekend was hot and sunny.   The dusty old umbrella was rigged up instead!

Menu

Tandoori Malasa Whole Chicken Breasts - we marinated whole chicken breasts rather than chopping up into small pieces for skewers.  Slash the top a few times for faster cooking.
Tandoori Masala Cauliflower Steaks - Follow the recipe for Cauliflower Tikka Masala but no sauce is required.   Cut the cauliflower into 1.5cm slices, marinade for as long as you can.  I then blasted them in the microwave for 2 mins before finishing off on the barbecue.
Tandoori Masala Barbecued Halloumi - so easy and went down a treat with both the adults and kids
Carrot Salad - always a winner.  So, colourful and refreshing.  Easy too!
Satay Sauce - this pretty much always features at every barbecue I ever do!
Mint and Coriander Raita - this goes so well with everything.
Green Salad

We simply put everything out on sharing boards on the tables and everyone helped themselves.   

If you would like to try this out, all you would need is our Tandoori Masala Blend and then 1.5 hours prep time.  Nice an easy!
