The hardest thing, for me, when I've got people coming for lunch or dinner is deciding on what to cook. I had my brothers and their families round for Sunday lunch recently and I didn't want to do a roast as I needed to prepare most of it the day before.
I stuck to what I know best, Indian food.
We skipped the starter as I knew the main course would be very filling.
The Main Event:
Slow Cooked Goan Beef, Medium Slow cooked (all ingredients from raw) for 8 hours on low
Smooth Chicken Korma (curry without bits) as there were fussy children there
Delicious Matar Paneer for some colour
Tarka Daal - I didn't have enough onions to make the Coconut Daal so just added a couple of teaspoons of our Tandoori Masala blend for a super lazy daal
Refreshing Carrot Salad and Mint and Coriander Raita
Mango and Chilli Chutney from the Spice Witch
We also had brown rice and shop-bought naans.
Dessert:
Coconut and Sweet Spice 'ice cream'Served with Sweet Spice Oaty Biscuits
I was cooking for a few hours the day before so it definitely needs some prep and thinking ahead. The hard work the day before, though, meant I could sit and chill and chat on the day. Tidying up is my husband's specialty!
