Goan Spiced Pulled Pork
Slow Cooker Recipes work so well if you are running a busy household or if you think you can't cook! It really couldn't be more simple to make deliciously tender and warming dishes.
This simple pork slow cooker recipe is a good one to make for a crowd on Bonfire Night, or a summer barbecue. Stuff into bread rolls with our carrot salad and our mint and coriander raita for a warming, filling casual meal. Both kids and adults will love this, making it a family favorite.
Serves 8 to 10
1 onion, roughly chopped
2 carrots, roughly chopped
2 kg pork shoulder, fat trimmed
6 tsps Goan Spice Pot (or use the Bhuna or Tandoori Masala)
1 400ml can of chopped tomatoes
4cm piece of ginger, grated
2 cloves of garlic, chopped or crushed
Place the onions and carrots at the bottom of the slow cooker and place the pork on top. In a jug, mix the tomatoes, Spice Pots spices, the ginger and garlic. Mix well and pour over the pork.
Cook on low for 6 to 8 hours.
Serve with fresh rolls, Mint and Coriander Raita and Carrot Salad. Yum!
