Vegan Savoury Pancakes

Vegan Savoury Pancakes

These pancakes are very easy, very tasty and are also gluten free and vegan.  

150g chickpea flour (also called Besan or Gram Flour)
Salt, 1 tsp
2 tsps Tandoori Masala Blend (or use Korma, Bhuna or Goan)
1/2 red onion, finely chopped
Handful of coriander

Mix the chickpea flour in a bowl with about 150ml water.  Mix to form a smooth batter.  Add more water until the batter is quite thin.  Tip in the spices, salt, onion and coriander and mix. Heat a little oil in a frying pan over a medium heat and spread all over evenly with kitchen paper.  Put a ladel full of the mix into the pan, spreading quite thinly.  Cook for approx 5 minutes on each side.

Serve on their own, with a raita or chilli jam or fill them with a spicy potato filling for a complete meal.  Use our samosa mix recipe here.
