A simple spiced salmon recipe and a great option for a mid-week dinner. This can be on the table in 30 minutes so is included in our 'Express Selection'. Serve with a green salad and some new potatoes for a delicious meal.
200 gram salmon fillet
3 tsp of either korma, bhuna, goan or tandoori masala spices
Salt, to taste
2-3 tsp lime juice
3 tbsp oil (I used coconut oil)
Pre-heat oven to 160C. In a bowl, mix together all the ingredients for the marinade to make a thick paste (add more lime juice if too thick to spread).
Wash and pat dry the salmon fillet. Line a oven proof dish with tin foil and place the salmon in the dish. Spread the marinade over the salmon and wrap the fillet up in the foil. Bake in the oven for 15-20 minutes (or less if you like your salmon medium-done).
Serve warm with a salad or pasta, or roasted vegetables or lovely new potatoes! Easy peasy.
You could also make this over a campfire - wrap in tinfoil and cook on hot coals until ready.
