Spiced Fruit Loaf Recipe

A delicious tea time treat our Spiced Fruit Loaf is packed full of dried fruit and it is easy to prepare! It freezes well too. A great one to feed a house full at Christmas time. Decorate with some springs of holly!
Ingredients:
225g sugar
250ml water
110g margarine
340g dried fruit mixture (you can also add some nuts if desired)
260g self-raising flour
1 teaspoon baking soda
Pinch of salt
4 teaspoons Sweet Spice Blend
2 eggs
Put water, margarine, dried fruit and sugar into a pan and bring to the boil. Simmer for 5 minutes. Allow to cool slightly. Add eggs and other ingredients and mix well.
Place mixture in a lined or greased 2lb loaf tin (or divide mixture between 2 lined 1lb loaf tins). Bake in pre-heated oven for 45 minutes at 180°C / 160°C Fan.
We suggest making double and freezing one so you have something to hand for those unexpected visitors!
