Spiced Potato Salad


An easy, no mayonnaise, potato salad.  Gluten free, vegan.

  • 500g (approx) potatoes
  • 2 tbsp olive oil
  • 2 garlic cloves, crushed
  • Fresh chilli (optional)
  • 2 tsp of either the korma, bhuna or goan 
  • 1 lime, juice of
  • Herbs, about 2 handfuls of fresh herbs; coriander, parsley, dill all work really well or a mixture of them all
  • Salt and pepper

Cook the potatoes in salted water until tender.  Whilst they are cooking, heat the oil and cook the garlic (and chilli if using). Add the spices (and a splash of water to stop them burning).  After a couple of minutes, add the lime juice.

Once the potatoes are cooked, leave them to cool enough for you to handle and chop into bite size pieces . Add the potatoes to the frying pan, and mix well to coat. Add some of the herbs (reserve the rest for garnish) and cook for a couple of minutes.  Add salt and pepper to taste.  Remove from heat and add the remaining fresh herbs.  

A lovely accompaniment for a barbecue or summer meal.
