Spiced Mince and Tatties

A fun fusion dish - one of Scotland's favorite dishes, with an Indian twist!

Serves 4

Ingredients:
1 tbsp oil
1 onion, finely chopped
250g lean minced beef
4 tsps of Korma, Bhuna, Goan blends
1 bay leaf
1 400g tin chopped tomatoes
4 medium potatoes, chopped into small pieces

Heat the oil and fry the onions until soft and transparent.   Add the spices and bay leaf with a splash of water (so the spices don't burn) and cook for about a minute.  Add the mince beef, turn up the heat and cook until browned.  Add the tomatoes and a little water (I half-fill the empty tomato can) and the potatoes.  Cook for about 20 minutes, or until the potatoes are tender.  Add more water if the dish looks too dry.  

Serve with peas.

This is a good one for camping and it's a one-pot dinner!  You can add other vegetables too and even swap out the meat for beans or lentils
